
A quick and easy Indian recipe made with ingredients from store – hope you enjoy as much as we did!
For the Chana Masala:

2 cups organic canned chickpeas (or cooked dried chickpeas)

1 tbsp organic coconut oil or ghee

1 onion, finely chopped

2 garlic cloves, minced

1 tsp grated fresh ginger

2 tomatoes, chopped
-
1 tsp cumin seeds
-
1 tsp ground coriander
-
1 tsp garam masala
-
1/2 tsp turmeric
-
1/2 tsp chilli powder (optional)

Salt to taste
-
1/2 cup water
-
Fresh coriander to garnish
For the Rice:

1.5 cups organic brown rice
-
3 cups water
-
Pinch of salt
Instructions:

Cook the rice: Rinse and cook brown rice with water and a pinch of salt. Simmer covered for ~35 mins until tender.

Make the curry: Heat oil or ghee in a pan. Add cumin seeds, then onions. Cook until golden.

Stir in garlic and ginger, cook for 1 min. Add tomatoes and spices. Cook down until soft and fragrant.

Add chickpeas and water. Simmer for 10 minutes to thicken.

Garnish with fresh coriander.
