A quick and easy Indian recipe made with ingredients from store – hope you enjoy as much as we did!

For the Chana Masala:

  • 2 cups organic canned chickpeas (or cooked dried chickpeas)

  • 1 tbsp organic coconut oil or ghee

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp grated fresh ginger

  • 2 tomatoes, chopped

  • 1 tsp cumin seeds

  • 1 tsp ground coriander

  • 1 tsp garam masala

  • 1/2 tsp turmeric

  • 1/2 tsp chilli powder (optional)

  • Salt to taste

  • 1/2 cup water

  • Fresh coriander to garnish

For the Rice:

  • 1.5 cups organic brown rice

  • 3 cups water

  • Pinch of salt

Instructions:

  1. Cook the rice: Rinse and cook brown rice with water and a pinch of salt. Simmer covered for ~35 mins until tender.

  2. Make the curry: Heat oil or ghee in a pan. Add cumin seeds, then onions. Cook until golden.

  3. Stir in garlic and ginger, cook for 1 min. Add tomatoes and spices. Cook down until soft and fragrant.

  4. Add chickpeas and water. Simmer for 10 minutes to thicken.

  5. Garnish with fresh coriander.
